Sugar Cookie Chia Pudding -High Protein

Day 11 of the 12 days of chia seed pudding is sugar cookie flavored. This super simple recipe uses banana and strawberry to make the pink frosting. Combine that with a buttery vanilla chia pudding and you’ve got a high protein dessert that will satisfy your sugar cookie cravings. This recipe was delicious as a dessert but it would also be a great breakfast or brunch recipe too. 

I added blueberries to the middle layer for extra fiber and because I had some on hand but feel free to substitute any fruit you have laying around or omit them all together. I love adding as much fruit as possible to my chia seed puddings as a contrast to the creaminess of the yogurt.

Ingredients

Topping 

  • 4 Strawberries
  • 1 banana
  • 1/2 cup blueberries

Preparation

In a mixing bowl combine all the ingredients for the chia pudding. Divide into two bowls and let sit for at least 20 minutes.

Pour half the chia pudding into a jar or cup. Layer the blueberries on top of the chia pudding. Layer the remaining chia pudding on top of blueberries. 

In a blender blend together banana and strawberries. Pour over the top of the chia pudding. 

Serve and enjoy!
