Pecan Pie Chia Pudding -High Protein Dessert

Day 10 of the 12 days of chia pudding is pecan pie. This recipe is so decadent you won’t miss the traditional pecan pie. The chocolatey richness of the chia pudding will not only satisfy your sweet craving, it’s also packed with protein as chia seeds contain almost 5 grams of protein in ¼ of a cup. Combine that with greek yogurt, whey protein powder, and collagen peptides and you’re looking at a high protein dessert. 

One tip is to make a big batch of the shortbread cookies and have them on hand for your chia seed pudding recipes. I use them for the cranberry shortbread chia pudding and the dark chocolate cherry tart chia pudding (separating half the dough and adding cocoa powder). Also, the shortbread cookies make an amazing snack dipped into the date caramel.

Preparation

In a mixing bowl combine all the ingredients for the chia pudding. Divide into two bowls and let sit for at least 20 minutes.

Preheat oven to 350 F

Combine the protein powder, keto flour, stevia, and monk fruit in a mixing bowl. Add in the yogurt. Mix with your hands to form a pie-like crust. Divide dough into 6 balls and form 6 cookies on a parchment lined baking sheet. Bake for 7 minutes or until cookies are slightly browned. 

Let cookies cool for 15 minutes. Crumble a few cookies between two layers of chia pudding

Heat about 2 cups of water to a boil. In a small bowl pour the water over the dates and let sit for 10 minutes. Blend all the ingredients for the caramel in a blender. Pour over shortbread cookie layer. 

Sprinkle it with toppings. Serve and enjoy!
