Easy & High Protein Banana Bread Muffins

These healthy high protein banana bread muffins are one of the best recipes I’ve made in a while. This recipe is made with whey protein powder, greek yogurt, and keto flour making them high in protein and lower carb. They are naturally sweetened with banana, monk fruit, and stevia make them the perfect balance between sweet and salty.

These muffins not only satiate any sweet tooth but they will also help you stay on track for your new years goals. The muffins are so creamy and fluffy combine that with the crunchy pecans and you’re in for a true flavor experience. 

I’ve found that baking with whey protein it’s really important to counterbalance the whey texture. Full fat greek yogurt is amazing at elevating your protein desserts. I like the Greek Gods brand but Siggi’s is also one of my go-tos. This recipe uses pecans but feel free to substitute for any other nut of your preference. These would also be delicious with dark chocolate chips if you are craving chocolate. 

What you will need

  • Bananas
  • Vanilla protein powder 
  • Greek yogurt (I used Greek Gods Plain Traditional)
  • Keto or gluten free flour
  • Monk fruit sweetener
  • Stevia 
  • Baking powder
  • Cinnamon
  • Vanilla Extract
  • Butter Flavor
  • Pecans
High Banana Bread Protein Muffins

Ingredients

Preheat oven to 350 F 

Mash the banana in a bowl then combine all the ingredients in a large mixing bowl.

Spoon the batter into a silicone muffin pan. The batter will make about 10 muffins. 

Bake for 22 minutes. Once 22 minutes is up check to see if the muffins are firm, if not cook for an additional 1-2 minutes.

Serve and enjoy!

Store in the refrigerator
