This egg recipe is made on repeat in my household. I love the combination of the sweet maple sausage combined with the herby flavor of the rosemary. This is the perfect high protein and low carb breakfast that’s also quick and easy. It combines fluffy eggs with spinach, mushrooms, and chicken sausage to create a satiating breakfast.
I used 3 eggs per person but feel free to sub out one of the eggs for more egg whites. Although, eating the whole egg has so many health benefits. Eggs are high in protein and include nine of the essential amino acids our bodies need to build muscle. They also include high levels of HDL cholesterol, which is a good cholesterol that our bodies need. Because of these things eggs help with satiety.
I love adding spinach to dishes when I can. Spinach is one of the best veggies you can eat. It’s even shown to support healthy energy levels. Spinach is loaded with vitamins including vitamin k for brain and bone health. It also has cancer fighting antioxidants. Combine the spinach with baby bella mushrooms and you have two cell protecting ingredients.

- Eggs (I use cage free eggs)
- Egg Whites
- Rosemary
- Chicken sausage
- Spinach
- Olive Oil
- Baby bella mushrooms
- Salt

Ingredients
- 6 eggs
- ½ cup egg whites
- Salt and pepper to taste
- ½ tsp Rosemary
- 1 tsp olive oil
- 2 Chicken Sausage Patties (I like Applegate Organics)
- 1 cup spinach, chopped
- 2 Baby Bella Mushrooms, diced
Preparation
In a saute pan cook the chicken sausage until brown on both sides. Remove and cube. Add baby bella mushrooms to pan and cook until soft.
Combine eggs, egg whites, rosemary, and salt in a mixing bowl.
Heat a saute pan over medium to low heat. Add in olive oil followed by the egg mixture. Stir the egg mixture constantly until fluffy scramble forms. Add in sausage, spinach, and baby bella mushrooms.
Serve and enjoy with your favorite hot sauce!
