Ingredients
- ½ cup chia seeds
- 2 scoops chocolate protein powder
- 2 scoops collagen peptides
- 1 cup greek yogurt
- ½ cup water
Cookie Layer
- 2 scoops vanilla protein powder
- 1/2 cup keto flour
- 2 TBSP cacao powder
- ⅓ cup greek yogurt
- 5 tsp monk fruit
- ⅛ tsp stevia
Chocolate Topping
- 1 TBSP Dark chocolate chips
Additional
- 10 cherries
Preparation
In a mixing bowl combine all the ingredients for the chia pudding. Divide into two bowls and let sit for at least 20 minutes.
Preheat oven to 350 F
Combine the protein powder, keto flour, stevia, and monk fruit in a mixing bowl. Add in the yogurt. Mix with your hands to form a pie-like crust. Divide dough into 6 balls and form 6 cookies on a parchment lined baking sheet. Press the cookies to make a small indentation in the middle. Bake for 7 minutes or until cookies are slightly browned.
Let cookies cool for 15 minutes. Crumble a few cookies.
Pour half the chia pudding into a bowl. Add a layer of cookie crumbles followed by half the cherries. Cover with the remaining chia pudding.
In a microwave safe bowl, melt chocolate for topping. Stir to make chocolate sauce. Pour over the top of the chia pudding. Add more cherries.
Serve and enjoy!
