Ingredients
Slow Cooked Chicken
- 1 pound chicken breast
- 2 TBSP soy sauce
- 1 TBSP fresh ginger
- 1 tsp turmeric
- 1 tsp coriander
- 1 tsp cumin
- 2 TBSP sriracha
- ¼ cup broth
For Serving
- ½ head of cauliflower, riced
- 3 baby bok choy, chopped
Instructions
- Combine all chicken ingredients in the Instant Pot. Cook on the “Pressure Cook” setting for 10 minutes. Once complete let the steam release for an additional 10 minutes.
- Using a food processor, rice the cauliflower. Add the cauliflower to a medium stock pot and cook over medium heat for about 10 minutes. Salt to taste.
- Heat a saute pan over medium heat. Spray pot with non-stick cooking spray or a drizzle of olive oil. Add bok choy and cook, stirring occasionally, until the broccoli and mushrooms are tender crisp, about 5 to 8 minutes. Salt to taste.
- Serve chicken over rice and bok choy and enjoy!
