Ginger Soy Salmon with Spinach and Zoodles

This salmon recipe is so flavorful and juicy! The combination of ginger, soy sauce, and garlic powder work together to create a rich and savory meal. Served on top a bed of zucchini noodles and spinach to make this a low carb and high protein dinner that’s quick and easy. 

I’m super lazy when it comes to midweek meals so when I made this recipe so quickly I was pleasantly surprised. Just whisk up the sauce for the salmon, pour it over the salmon and air fry it. The spinach and zoodles also come together quickly and effortlessly, just spiralize the zucchini and throw it in a saute pan with all the other ingredients. 

Since I started my fitness journey, I’ve found that it’s better if I don’t eat carbs at night. I plan to eat them before or after activity. Using zucchini as a substitute for noodle is one of the best veggies I’ve found for a replacement as they are one of the few that stay together. 

What you’ll need:

  • Salmon
  • Soy sauce
  • Garlic powder
  • Monk fruit 
  • Ginger powder

Ingredients

Ginger Soy Salmon

Spinach and Zoodles

  • 2 zucchini, spiralize
  • 12 oz spinach, chopped
  • 2 cloves garlic
  • 1 knob of ginger 
  • 2 green onions 
  • Sesame seeds for garnish

Instructions

  1. Mix the ginger powder, garlic powder, soy sauce, and monk fruit in a small bowl. Wash and pat salmon with a paper towel. Pour mixture over the salmon and massage into the salmon. Place salmon in the air fryer and cook for 12-15 minutes depending on the thickness of the salmon. 
  2. In a large stock pot over medium heat add the zucchini and ginger and cook for 2-3 minutes. Add in the spinach and garlic and cook for an additional 3-4 minutes. 
  3. Serve and enjoy!
  4. Add salt and pepper to taste. Serve and enjoy!
