Looking for a low carb and high protein way to satisfy your sweet tooth. Look no further than this peanut butter brownie recipe. These gooey and creamy brownie bites combine peanut butter and chocolate to make this a truly decadent treat. This recipe uses almond flour instead of all purpose making it a low carb option for people with dietary restrictions.
Peanut butter gets a bad wrap but it is a power house with loads of nutritional benefits. It has so many vitamins that we’re normally deficient in like: Vitamin E, Magnesium, Iron, Vitamin B6, Zinc, and Phosphorus. Peanut butter also helps with digestion, blood sugar control, and weight management. It’s also heart healthy because it helps improve blood cholesterol levels and lower inflammation.
I don’t normally substitute almond flour in recipes but this recipe is one where it works perfectly and by using almond flour you’re getting all the benefits that come with almonds. Almonds are heart healthy, great for blood sugar control, improve digestion, prevent cognitive decline, and are rich in vitamins that improve skin health.

- Cocoa powder
- Peanut butter
- Egg whites
- Monk fruit sweetener
- Stevia
- Baking powder

Ingredients
- 1/2 cup chocolate peanut butter whey protein powder
- ¼ cup almond flour
- 2 TBSP cocoa powder
- 5 TBSP Peanut Butter
- ½ cup egg whites
- 3 TBSP Monk Fruit Sweetener
- ⅛ tsp stevia
- ½ tsp baking powder
- ⅛ tsp sea salt
- ¼ tsp vanilla extract
Instructions
Preheat oven to 350 F
Combine whey protein, almond flour, cocoa powder, monk fruit, stevia, baking powder, and salt in a mixing bowl.
In a small bowl whisk together egg whites, peanut butter, and vanilla extract. Stir wet ingredients into dry ingredients
Spoon the batter into a silicone muffin pan. The batter will make about 8 brownies.
Bake for 10 minutes. Once 10 minutes is up check to see if the cookies are firm, if not cook for an additional 1-2 minutes.
Serve and enjoy!
