Sesame Meatballs with Bok Choy and Cauliflower Rice

These sesame meatballs are the perfect easy midweek recipe. They are packed with loads of protein and are low carb since they sit on top of a bed of cauliflower rice. I paired it with sauteed bok choy to add even more fiber. The sweet and spicy sauce is the perfect compliment to the savory meatballs and since it uses monk fruit it’s low glycemic.  

If you haven’t been including bok choy into your diet this is a sign to start! Bok choy is high in magnesium, calcium, iron, and zinc making a superhero for bone health. It also has been shown to have cancer prevention properties. Bok Choy is also amazing for your heart because it contains vitamins C and K.

Red meat gets a bad rap but including a super lean red meat into your diet can be beneficial. Lean ground beef is lower in calories and contains protein. It also has an antioxidant that helps prevent cell damage and aids in metabolism. For most of my life I was either vegan or vegetarian until recently when I went to the doctor and found out how unhealthy I was. About a year ago, I started introducing beef and bison into my diet and have felt amazing since. 

What you’ll need:

  • Ground beef (Grass fed, 93% lean ground beef)
  • Onion powder
  • Soy Sauce
  • Garlic
  • Green onion
  • Monk fruit 
  • Ginger
  • Rice wine vinegar
  • Sambal oelek
  • Cauliflower
  • Bok choy
  • Sesame seeds

Ingredients

Sesame Meatballs

  • 1 pound lean ground beef
  • 1 TSP onion powder
  • 1 TBSP Soy Sauce
  • 2 garlic cloves
  • ¼ cup green onions, Chopped


Glaze

For Serving

  • ½ head of cauliflower, riced
  • 3 baby bok choy, chopped
  • 1 TBSP Sesame Seeds

Instructions

  1. Preheat oven to 400 F
  2. Combine all meatball ingredients in a small bowl. Using a fork or your hands mix well and combine all the ingredients. Roll into meatballs and arrange on an oiled or parchment lined baking sheet
  3. Bake for 20 minutes or until the meatballs are golden brown and center is fully cooked.
  4. In a small bowl whisk together all the ingredients for the glaze.  
  5. Using a food processor, rice the cauliflower. Add the cauliflower to a medium stock pot and cook over medium heat for about 10 minutes.Salt to taste. Divide between two plates
  6. Heat a saute pan over medium heat. Spray pot with non-stick cooking spray or a drizzle of olive oil. Add bok choy and cook, stirring occasionally, about 5 to 8 minutes. Divide between two plates.
  7. Pour glaze mixture into the saute pan. Add cooked meatballs and stir to fully coat. 
  8. Serve meatballs over rice and bok choy and enjoy!
