This enchilada soup is packed with protein, healthy, and sure to satisfy any hunger. It’s super simple and can be made in 30 minutes or less, and it only uses one pot making cleaning up a breeze.
I love taking normally high carb recipes and making a clean and healthy alternative. That was one of my motivators for starting this blog. If you are tired of recipes claiming to be healthy then you read the ingredients list and it has 1 cup of butter then you are in the right spot. All of my recipes are low carb, high protein, and actually healthy.
This enchilada soup contains no dairy but it’s packed with so much flavor and richness you won’t miss the cheese. It also includes a homemade enchilada sauce so you will save money on buying expensive store brands.
What you need to make beef enchilada soup:
- I used grass fed, 93% lean, ground beef but you can use your ground beef of choice.

Ingredients
- 1 lb Ground Beef
- ¼ yellow onion, diced
- 3 cloves garlic
- 1 tsp oregano
- 1 tsp chipotle chili powder
- ½ tsp paprika
- 1 tsp cumin
- 1 tsp chili powder
- Zest and juice for ¼ of lime
- 1 tsp Salt
- ¼ cup cilantro
- 8 oz no salt tomato sauce
- 2 bell pepper, chopped
- 2 cups broth
Preparation
In a large stockpot, cook the onion until brown. Add in beef and cook until brown. Add in vegetables and spices. Cook until vegetables are tender crisp. Add in the broth, tomatoes, and tomato sauce. Simmer for 20 minutes. Serve with more cilantro and lime.
Serve with lettuce and enjoy!
