Welcome to day 9 of the 12 days of chia pudding. Today’s recipe is my take on if a cinnamon roll and chia pudding had a baby. With just a few ingredient and minimal effort, you can make this decadent treat that will bring back memories of Christmas morning. This creamy vanilla chia pudding combines the creaminess of vanilla with the health benefits of chia seeds, making it the perfect high protein treat.

What you need
- Chia seeds
- vanilla protein powder
- Collagen Peptides
- Cinnamon
- Greek Yogurt
- Monk Fruit sweetener
- Cottage Cheese
- Pecans
If you are wonder what products I typical buy here’s a few of my favorites. When it comes to protein powder I’m all about the Ascent brand of whey protein. Ascent doesn’t included any sugar alcohols and only uses a little bit of monk fruit and stevia. Making it one of the best brands in my opinion. Further Foods Collagen peptides are a staple in my pantry and like Ascent, Further Foods only uses stevia and monk fruit in their products. Full fat greek yogurt is my go to for yogurt and I’ve been buy Greek Gods brand on repeat.
Ingredients
- ½ cup chia seeds
- 2 scoops vanilla protein powder
- 2 scoops collagen peptides
- 1 cup greek yogurt
- 1 TSP cinnamon
- ½ Cup Water
Cinnamon Swirl Layer
- 1 TSP cinnamon
- 4 TSP monk fruit
- 1 TSP butter flavor
Creme
- ½ cup cottage cheese
- 1 TBSP milk of choice
- 4 TSP monk fruit
Toppings
- 1 TBSP Pecans
Preparation
In a mixing bowl combine all the ingredients for the chia pudding. Divide into two bowls and let sit for at least 20 minutes.
In a small bowl combine all the ingredients for the cinnamon swirl layer. Spread between two layers of chia pudding.
Blend all the ingredients for the creme in a blender. Pour over the chia pudding.
Sprinkle pecans over top of chia pudding. Serve and enjoy!
