Cranberry Shortbread Chia Pudding-High Protein Dessert

Welcome to day 8 of the 12 days of chia pudding. Today’s recipe is cranberry shortbread. This recipe includes a layer of butter protein shortbread cookies and cranberry sauce which is sure to satisfy your Christmas dessert craving. This creamy vanilla chia pudding combines the creaminess of vanilla with the health benefits of chia seeds and cranberries, making it the perfect high protein treat for the holiday season.

If you are wonder what products I typical buy here’s a few of my favorites. When it comes to protein powder I’m all about the Ascent brand of whey protein. Ascent doesn’t included any sugar alcohols and only uses a little bit of monk fruit and stevia. Making it one of the best brands in my opinion. Further Foods Collagen peptides are a staple in my pantry and like Ascent, Further Foods only uses stevia and monk fruit in their products. Full fat greek yogurt is my go to for yogurt and I’ve been buy Greek Gods brand on repeat.

Cranberry Shortbread Chia Seed Pudding

Ingredients

Cookie Layer

Cranberry Layer

  • 12 oz cranberries, clean and picked through
  • ¼ cup orange juice
  • ½ tsp stevia
  • 4 tsp monk fruit 

Chocolate Topping

Preparation

In a mixing bowl combine all the ingredients for the chia pudding. Divide into two bowls and let sit for at least 20 minutes.

Preheat oven to 350 F

Combine the protein powder, keto flour, stevia, and monk fruit in a mixing bowl. Add in the yogurt. Mix with your hands to form a pie-like crust. Divide dough into 6 balls and form 6 cookies on a parchment lined baking sheet. Bake for 7 minutes or until cookies are slightly browned. 

Let cookies cool for 15 minutes. Crumble a few cookies. 

In a small saucepan over medium combine all the ingredients for the cranberry layer. Cook for 10 minutes or until cranberries burst and form a jelly like sauce. Let cool. 

Pour half the chia pudding into a bowl. Add a layer of cookie crumbles followed by the cranberry sauce. Cover with the remaining chia pudding. 

In a microwave safe bowl, melt chocolate for topping. Stir to make chocolate sauce. Pour over the top of the chia pudding. Add more cranberry sauce and cookies. 

Serve and enjoy!
