Ingredients
Slow Cooked Chicken
- 1 pound chicken breast
- 2 TBSP Balsamic vinegar
- 1 TSP salt
- 1 TBSP fresh ginger
- 2 Cloves garlic
- 1 TBSP apple cider vinegar
- 2 TBSP broth
For Serving
- ½ head of cauliflower, riced
- 1lb brussel sprouts, halved
- 1 TBSP Balsamic vinegar
- Salt to taste
Instructions
- Preheat oven to 400 F
- Arrange brussel sprouts on a silicone lined baking sheet and drizzle with balsamic. Place in the oven and bake for 10-15 minutes or until brussel sprouts are tender.
- Combine all chicken ingredients in the Instant Pot. Cook on the “Pressure Cook” setting for 10 minutes. Once complete let the steam release for an additional 10 minutes. Change Instant Pots setting to saute and cook on high until most of the liquid is absorbed.
- Using a food processor, rice the cauliflower. Add the cauliflower to a medium stock pot and cook over medium heat for about 10 minutes. Salt to taste.
- Serve chicken over rice and brussel sprouts and enjoy!
