Ingredients
- 6 eggs
- ½ cup egg whites
- Kosher Salt and Pepper to taste
- 2 slices turkey bacon
- 1 cup spinach
- ½ cup fresh pineapple
Preparation
In a saute pan cook the turkey bacon until brown on both sides. Remove the turkey bacon and slice.
Combine eggs, egg whites, and salt in a mixing bowl.
To a silicon muffin pan or greased muffin pan, add in spinach followed by the turkey bacon. Sprinkle pineapple on top.
Bake at 375 degrees for 20 minutes or until eggs are cooked all the way through.
Serve and enjoy with your favorite hot sauce!
